Complete!

A couple of weeks ago I finished baking all the cupcakes! (with the exception of a few) I was unable to bake a few because they required ingredients and equipment that I COULD NOT FIND/DIDN'T HAVE. BUT I did all that I could. My last one was Red Velvet, a classic which of course tasted amazing. The last few months were tedious because I had to make so many but it taught me a lot. If I want to one day have my own business, I need patience and I need to buy in bulk! It was a lot of fun and I am even more interested in baking than I was before.

Carrot Cupcakes: the carrots are complimented by pecans, cream cheese frosting, and toasted coconut!

Zucchini Spiced Cupcake: also topped with cream cheese frosting!

Chocolate Chip Cupcake: simple and delicious, I added extra chocolate chips because I love them!

One Bowl Chocolate Cupcakes with Gumdrops: although they look really good with the gumdrops, it was a lot to eat the whole cupcake with everything on, but the cake itself is good!

Happy Mother's Day!

Today is Mother's Day so I made a special cupcake! This recipe is part of the 64 that I'm doing but I saved it for today because it has a very spring feel and look! I'm pleased with how they came out because I wasn't sure if I could do the topping like how it's pictured in the book. It's just a plain white cupcake with buttercream frosting and I colored it to get that pinkish color.
I'm almost finished belive it or not I only have about 15 left and 2 weeks. Hopefully I'll be able to do them all but I'll be challenging. I might have to skip the hard ones if I don't have time because it's also costing money buying all the ingredients although I've been trying to be as cheap as possible. I've been bringing them into school to get rid of them because 3 people can't eat all of those cupcakes! Pretty much done though!


Martha's Meyer Lemon Curd: it's a lemon flavored cupcake and was supposed to have a lemon curd on the top but I had trouble making it and it wasn't hardening so I just left it as is. It was still good though!

Triple Citrus Cupcake: the main ingredients are lemon, lime, and orange but I didn't have an orange so technically it's double citrus. It didn't effect the outcome/consistency though!

Stout Cupcake: made with stout beer and the glaze is stout flavored as well!
Cookies and Cream Cheesecake: self explanatory and yummy!

Lemon Yogurt Cupcakes with Raspberry Jam: a long name but a great cupcake! filled with raspberry jam and topped with a sprinkle of confectioners sugar.

Chocolate Spice: I love chocolate ganache! It makes the cupcake that much better and I was very generous with it!
Coconut Rum Raisin: I would have liked these without the glaze but I may have made it wrong or missed something so I'll probably try it again soon

Peanut Butter: the second cookie cupcake. I love peanut butter so this was really good!

Oatmeal: the last cookie cupcake. Very tasty, no topping needed!

Mocha Cupcake: a coffee flavored cupcake with a coffee flavored frosting!
Blondie Cupcake: a little bit different then the brownie version because it isn't warm and includes cashews!

Mrs. Kostyra's Spice Cupcake: made with spices such as nutmeg, cinnamon, mace, and all spice topped with an orange zest for a kick of flavor

Raspberry Tea Cakes: the original recipe called for strawberry jam but I used raspberry instead..still just as good!
Chocolate Chunk: one of the three cookie cupcakes. These didn't exactly turn out like Martha's but they were still pretty good. I might try them again to make them better!

These were different because I only used the cake recipe. I made these for my brother's lacrosse team (the "H" stands for Hobart). I spent HOURS in the kitchen making all these cupcakes but it was a lot of fun! The two recipies I used were the Devil's Food Cupcake for the chocolate, and the Yellow Buttermilk Cupcake for the vanilla! VERY delicious and much better than using a box for sure!
Peanut Butter Filled Chocolate Cupcake- absolutely delicious. Probably because I love peanut butter and I love chocolate!

Pumpkin Brown Butter Cupcake- This was surprisingly delicious! It's made with a pumpkin puree and very tasty especially with the brown butter glaze!

Sticky Toffee Cupcake- I wasn't really a fan of this but It's made with dates and topped with a sticky glaze!

Vegan Chocolate Cupcake- made totally vegan, you could barely taste the difference between this and a regular cupcake!
Date Nut Cupcake- if you love dates, you'll love this cupcake. It's also filled with walnuts and a whipped cream topping!

Peanut Butter and Jelly Cupcake- SO good! A heavy cupcake but something of nostalgia, filled with actual peanuts and topped with jelly and a peanut butter frosting!

Blondie Cupcake- Made with butterscotch chips and cashews. Different but tasty!

Iced Lavender Brownie Cupcake- I kind of left some things out of this one because I couldn't find dried lavender (so the icing didn't taste like lavender) and I couldn't get edible flowers to top them with.

Cream-Filled Chocolate Cupcake- One of my favorites! It's a plain chocolate cupcake topped with a marshmallow mixture and filled with the marshmallow mixture too!

Mint Filled Brownie Cupcake- A plain brownie cupcake but with a surprise when you bite into it: a peppermint patty!
Applesauce Spiced Cupcake- topped with a cream cheese frosting and filled with applesauce and pecans! Moist and crunchy!

Apricot Glazed Black and White Cheesecake- the bottom is made of chocolate wafers and an apricot jam is surrounded by a cheesecake filling!

Blackberry Cornmeal Cupcake- this turned out just like Martha's! Very good!

Blueberry Cupcake- filled with moist blueberries and topped with them!

Chai Tea Spiced Cupcake- this is made with A LOT of spices but still balances out well in the cupcake!

ALMOST

not really but I'm halfway there. still have A LOT to go by the deadline of mid May so I'm really gonna try and bang a lot out  tomorrow and the rest of the week! i'm just gonna post the rest that I've done!

This weekend was pretty productive. I made 3 cupcakes, and I'd say I'm making pretty good timing. When I have off for spring break I'll be able to get a lot done for sure! Right now I've been making at least 2 every weekend and sometimes during the week. The cupcakes are absolutely delicious and my official taste testers (mom and dad) love every single one! Sometimes it gets tiring and I get impatient making them, but I look forward to see how they are going to turn out in the end. And I also know what works and what doesn't work. There are a ton of chocolate cupcakes which makes me really happy because I love chocolate! I've been doing all the hard ones first so that in the end it'll be pretty easy to finish off the rest of the book.

Update!

So, the three posted below are VERY different. I made a roasted banana which was very good (if you like bananas), and flourless chocolate (the recipe called for vanilla ice cream but since I love chocolate, I topped mine with a dark chocolate ice cream to make it extra chocolatey), and lastly is a German chocolate. The inside is filled with pecans and coconut made with a chocolate cake!

ANOTHER CUPCAKE yaaay! This one wasn't really my favorite although it looks amazing. I think I put too much Amaretto in it which made it a little strong. And I always have a tough time with the whip cream so it was kind of liquidy and kept sliding off the top of the cupcake, which didn't exactly make it appealing.

Finally!

Ah it's been too long and I've made a lot of cupcakes since the last post. I've gotten lazy but I'm just going to post the pictures right away!!

Banana Pecan Cupcake: warm banana muffin with crunchy pecans!
Snickerdoodle Cupcake: just like the cookie but better! Definitely one of my favorites!
Streussel Cupcake: another one of my favories, it tastes just like a crumb cake! I'll definitely make this again!

Marble Cupcake: vanilla and chocolate cake garnished with powdered sugar. Simple but sweet!
Strawberry Cupcake: SO good! With the strawberries baked in to the cake, strawberry buttercream frosting and fresh strawberries for garnish, this one is for ALL strawberry lovers. YUM

Tres Leches Cupcake: made with 3 different types of milk for a very moist cake!
